Ingredients: 500g mature cucumber, 1 grass carp (or another freshwater fish of your choice), a suitable amount of fresh ginger, and coriander.
Instructions: Wash the mature cucumber, remove the seeds, and cut it into chunks (keep the skin). Clean the grass carp, pat it dry, and sear it lightly in a pan along with fresh ginger. Then, place the seared fish and mature cucumber into a pot, add 1000ml of water, and bring it to a boil over high heat. Reduce the heat to low and simmer for 45 minutes. Just before serving, add chopped coriander and season with salt to taste.
